Change plot configuration file in print organizer

Question

I can see how to change the pen table once I have a .pset file, but how do you change the plot configuration file?

The PLTCFG file associated is a property of Print Organizer not the Print Definition. Print Organizer will print to one device at a time. To set the output select File > Printer Setup from the Print Organizer menu. 
 
 
 On the Printer Setup dialog you have the option to select the PLTCFG file.
