As Zhou Qianyi suggested you could try choosing High, Exhaustive, and Multi-pass for the first 3 settings and see if you get acceptable results. You can hover your mouse cursor over each of the Settings options to see tooltips with use suggestions.

I took around 39 to 45 photos for each mound and didn't zoom in at all. Are there any settings that might help create a better production?

Hi Hannah,
I think your photo looks fine.
How many photos did you submit to ContextCapture?
I would suggest taking a minimum of about 20 evenly spaced photos for a point of interest like the termite mound. That would give about 18° between each photo position. Avoid zooming in or out to maintain a fixed focal length while taking the pictures. That should provide enough overlap between each photo for ContextCapture to generate good results.

I forgot an other advise , you can try to modify the default parameters when you do the Aerotriangulation , maybe you can get a better result.

I think the bigest problem is not caused by light, the reason is the hight of camera. if you try to catch pictures from more higher place, such as use a high tripod, maybe you can get a better result. My advise is to get your pictures from more higher place.
