I ran across this tutorial for creating a 2.5D ortho map, can someone please define what exactly 2.5D is? I don't even notice the difference between the older ortho map amd the new 2.5D ortho map in this video.

2.5D means it is not created from full 3D reality model but slightly faster process. Actually it is misleading term and should be avoided as 2.5D is for DSM/DTM geotiff where each pixel has also z elevation but actual raster is 2D and not 3D model. The produced orthophoto is 2D so there is no elevation.
