That would require building specific report for extraction of this data. Extracting basic information on Documents can be done using core eB reporting but for extraction of more complex data you will have to use SSRS reporting.

Do you mean that there is no way to do it automatically? So, we have to use ssrs reporting or querying directly in the database. Is that correct?

Not that I'm aware of. Provisioning spreadsheet can extract data, but data on Documents would be extracted to multiple sheets and you would have to combine it, making this more complex.
Can you give me more information what data you need to extract. Maybe, simple eB report can be created for this.

We are trying to move documents from one Community to another community. Destintation community already has data, so we can not copy databases. We need to extract the documents (all metadata and its files) )from the original community and pass them over to destination community.

In that case Provisioning Spreadsheet would be best solution. Provisioning spreadsheets allows you to export data and then you could import that data to other community. Unfortunately, it does not support file export.
This would be complicated process. You could use get all files action and retrieve all files from documents, but these files would be placed in separate folder and you would have to manually put them under one directory to upload them using spreadsheet to new community. Second solution: copy files directly from repository, retrieve ‘real’ file names using sql (as files are saved in repository using ID not file name) and creating script that would rename files using original file names.
