in eB 15.6 the Folder Structure Report will show the structure under a specific folder:
Run the report and it will display the folder structure under the selected folder:

Can this report be reconfigured to include the documents with a folder when downloading all results and the document number be set a hyperlink in the Excel output?
Good day Steve, I have spoken to our team and they suggest that PS can assist you using a SSRS report. Unfortunately this is not something we can do from eB at this stage.
