Is there any way to allow the Top face of the slab to follow the curvature of the alignment (horizontal and vertical), but for the Soffit of the slab to remain level (horizontal, but vertical is fixed). Or for the slab to be placed to follow the horizontal geometry of the alignment only?

This sounds like something you would handle with a custom template. Most likely you will be able to edit some of the constraint relationships in a library template to get what you want. Post some pictures or a sketch here of exactly what you want to do though so we can further help.
