Have read Steve Cocchi's the posts on how to edit detail symbols but when one tries to edit the field that says 'sheet name' in the detail bubble, its properties are unavailable to be edited. Seems it is a system field. How does one change this field to be the Sheet Number instead of the Sheet Name?The Sheet Names are too long and often overwrite the scale text. We have always used sheet numbers in this detail bubble but need to find way of changing the default to show as the Sheet Number instead of editing every detail bubble that is placed.

As you see, the default detail symbol is using the "Sheet Name" property of the sheet model toi populate the bottom half of the detail bubble. This is true of the other symbols automatically placed. The title of the drawing created is the usung the "Name" property of the model.
A simple solution is to edit the Sheet Name in the Model Properties. While in a sheet model you can select the Annotation Scale tool (or go to the Primary Toolbar and select Models > Model Properties) to open the model properties. Keep in mind the model porperty "Sheet Number" represents the sequence number of the sheet in the whole construction document set. That value only accepts numbers. So, I think of the Sheet Name as really the Sheet number: A101, S-211, M.123, etc,. etc. (whatever your standard is).

Stiil having issues with this one unfortunately. I followed your advice and it seemed to have worked well but now it is not doing so.
Now that I have started another session, when I now wish to place an elevation, section or plan callout, I choose the Detailing Symbol Styles button and from the drop-down list I select the particular callout I want (my modified model from the dgnlib file). When it is placed it still reverts to the Sheet Name and not the sheet number notwithstanding sheet number is the field in my modified model.

Any further help you can offer would be appreciated including any advice on where a consig variable may be to set this as default and how to actually change the variable.

Just a couple of things to take a look at.
Is this a different project you are in now?
Is it working OK in one project and not the other?
If so you may need to copy the dgnlib seed files from the project that it is working right in to the new project. The seed dgnlibs have which Detailing Style to use for those seeds defined in them.
To place the call-outs use the Drawing Composition tools. If you are creating a drawing, turn on the Create Drawing switch in the Tool Settings Dialog Box, when you set the seed it will reflect which Detailing Style is set to be used by the seed file (and will be grayed out).
If you are not creating a drawing (these tools can be used just to place the symbols without creating drawings) you can pick the correct Detailing Style in the Tool Settings dialog box.
