Some long overdue improvements to the stair tool finally. Winding risers and spirals, great, been waiting a long time for these. Good.
Could still do with an additional type for half turn stairs and quarter turn stairs that allows more than 2/3/4 runs respectively. Would be even better if we could combine winding risers with these, or at least place separate types together to make up a full stair.
A little bug that I have found though is to do with stair height. By default I am unable to change the height by setting, as it is greyed out. I have gotten around this by editing the catalog items to allow editing of the height, but think this should be enabled by default.

Regarding the height issue, I have tried the same and it is different, it is not grayed out. Please see the image.

In your Datagroup catalog, is the height parameter editable and which dataset are you using? I am using Dataset_UK
I thought this topic came up before, but perhaps not... Anyhow, the ability to edit the Stair Height is based on which specific stair type you've chosen. Some have that property's Editable flag enabled in the Catalog Editor while others do not.

With the Dataset_UK anyway, all those delivered are height locked, and somehow, my project stairs which were not height locked in U4 are now height locked! Go figure.
Interesting... I have these stairs as Editable in the delivered UK dataset: Winder, Spiral Monolithic, Spiral Schematic, and Wide Spiral Monolithic. All of the others are not. Fortunately it's simple enough to change, though I can't explain how or why your project stairs changed from U4 to U5...
