I would like to launch OB7 with only architectural tools and a reduced dataset, mostly for performance matter.
Is there a way to get rid of all mechanical, structural and electrical datas and to remove most of the datagroup catalog ?
And can someone point me the configuration variables to adjust to have all configuration folder on NAS except the dataset_fr which could remain on individual workstation,
ie Organization and Workspaces on NAS and Datasets of local hard drive.

First I would suggest that you only have one question per post as your second question may not get answered. Particularly if, as I am only answering your first question.
Yes, you can get rid of (remove) unwanted content in whichever dataset you are using.
Marc Thomas wrote a blog on this recently, use this to give yourself a starting point to removing content from the dataset. Remember to create a backup copy the dataset first though!
