Is it possible to create a section view, using the section call out tools, that has an angle in it? I'm aware you can add a step or a gap in a section but not too sure if it's possible to have an angle.
As an example, would it be possible to create 1 section along the dashed line?
Not that I'm aware of. For that kind of output, I normally just create 2 sections then clip and superimpose them.

Yeah, that's what I've done in the past. Was hoping there might be a better solution but I'll stick with that.
It would also be usefull to make certain parts of a plan section cut higher than the main cut plane, for example if parts of the floor are higher than others.
