If I place two spheres that are:
Family - Concrete
Part Prestressed Concrete
Render: Dk Concrete
The look both like Dark Concrete when rendered.
When I assign a material to one to brown leather . (It does not change the part's material but changes all instances that have the part for which I am assigning to that material. I only selected one part not all.

When you select the Assign option then the material will be assigned to all objects on the active Level. So if both spheres were placed on the same level then they both will change.
To change only one sphere you need to select the Attach option.

So Attached applies a meterial to one item
Assign does it to a level???
And update part updates the part assignement.

The Apply method can be user per object or even per face. But yes, Assing is by Level + Color combination. So you could change just the color of one of those spheres and assign a different material.
