How I can control the geometry of door and stairs in the cut drawing ?

One way - ("right-click) the door or stair and change the items in the dialog box 
 You must "Check" the item you want to change before you can change it. 
 Then some items like the stairs you can select the stair and then change the dimensions manually or drag the handles
