After adding a step to an existing Plan Callout, I noticed that the grid already displayed in the Drawing Model or when applied to the 3D Model suddenly stops at the point where I added that step. Is there any way to display the full grid while keeping the step?
Defect 810554 has been filed against this issue. As you have found, the grid's display is truncated at the point where the first step is added, but only when the Clip Volume's edit handle on the stepped side is cropped.

Two potential interim workarounds would include:
1. Manually reference grid Models. - From the Drawing Model, change to the Drawing Production tab and click on the Presentation button in the Settings tool block:<<03A Reference Presentation>>- Turn the grid display off in the > Set Reference Presentation<<03B Disable Grid Lines>>- Open the Grid Systems dialog<<03C Grid Systems Dialog>>- Click on the Create/Update Grid Models button in order to generate physical DGN Models for the appliable grid systems<<03D Create-Update Grid Models>>- Reference the applicable grid Model(s) into the Drawing Model.<<03E Reference Grid Models into Drawing>> <<03E2 Referenced Grid Models in Applied Drawing>>
