You have to understand how Microsation uses cells graphic and level properties when you define your cells. Are you aware of the different techniques?

For sure, as you said, if you uncheck "Override Cell Symbology", none of define symbology in Geospatial administrator will Override native symbology define by Cell model. As workaround, I would suggest to keep this option check and set criteria for color = 0. For Criteria, 0 mean false and it won’t override color defined and use the color from cell. all other symbology will override.
