Hi Neta,
You can view the vertical stresses or stresses in other directions in Output via the Stresses menu. From there, you can view the effective or the total stresses in the Cartesian coordinate system or as principle stresses. You can find more information in Chapter 9.3 (Stresses) of the PLAXIS 3D - Reference manual.

The change in stresses is not directly accessible through Output, as the results are displayed in absolute values. However, you may select a few stress points and generate the corresponding vertical stress graph in the Curves Manager. This graph will exhibit the change in stresses for each phase.

The same way: either in Output as displacements from the Deformations menu or by selecting a few nodes on the side of the embankment and generating the corresponding lateral displacements graph in the Curves Manager.
