So my question is that when you are targeting a factor of safety, do you input that targeted FoS in the model somewhere?

There is no specific tutorial demonstrating a safety analysis with a target value, however, indeed, the article explains how this calculation type works.

The target value can be specified in the Phases window (double-click on any phase to open) and then at the specific field of ΣΜsf as shown below:
