Is it possible to add crossings to profiles at this time?

If you are referring to pipe crossing in profile, then that feature is currently unavailable in profile view. However we have logged an enhancement with our development team for this feature. The Enhancement number is 179115 : Show crossing pipes in profiles.

If you only need to see lateral connections in profile view, this can be done in the current version, using the taps and laterals feature (applicable to some numerical solvers in SewerGEMS). See more here: Including multiple invert elevations in a profile

As mentioned in this thread, SewerGEMS can display the connection point of a lateral pipe in profile view. If you are looking for something more than this, I would recommend looking at OpenRoads Designer, which has expanded 3D design and clash detection, going beyond hydraulics.
