What do i need to transform a reservoir model into a tank model??

For tanks, you would enter the minimum, maximum and initial HGL based on the real tank. See: Understanding Tank Operating Range

For controls, ensure you're using the latest version (currently 10.04.00.108) and use the new Controls user interface to easily set up on an off controls for your pumps based on the appropriate conditions (such as a downstream tank level). See: Using Controls, Conditions, Actions and Control Sets in WaterGEMS and WaterCAD

You'll likely also need to develop patterns for your demands, to vary the demand over the course of the simulation duration.
