Trouble finding learning resourses suitet for a beginner in iTwin Manage and Extract

We're using drone footage to produce ortophotos and 3D-models for our municipality office. Up until now we've used Context Capture and Capture Editor but since they are out of production we have now shifted to iTwin Capture Modeler and Manage & Extract.

I find it overwhelming when opening the Manage & Extract software and I am now trying to find sources for learning and training but have no success. Would anyone know where to find such resources?
