I'm looking to go back to using a previous version of MicroStation, as after the new update rendering seems to be far inferior to the previous version.
How do i go about reverting to a version before this update?

You'd have to uninstall the current version and search for the previous one on softwaredownloads.bentley.com
Please note that some of the older versions of MicroStation have been archived and are no longer available for download.
In such case you can contact support and ask for the installer for the archived version
If want to have Connect and v8i, you can install both with no issues. This is what a lot of us have done. If you have installed say v8i ss10 and want to revert to v8i ss3, you would want to unsinstall.

Just to note that you may be having issues with the new Vue Rending in the latest releases of MicroStation, you might like to discuss any problems you may have encountered on the Visualization community. As you have probably realized, Vue has replaced the Luxology rending tool so you may find it more helpful to discuss your issues with the visualization specialists on this forum.
