I have a standard dimension that I want to copy around to various parts of the drawing. When I adjust the location of the leaders, the text is no longer centered. See picture. How can I either adjust the text location or make it stay centered every time?

If you select the Modify Element tool, then select the text element of the dimension you should be able to reposition as required.

It looks like you have the Drop Dimensions box enabled. Go to: Element > Dimension Styles. Set the Style active. Click on the Advanced tab, then go to General > Placement, and uncheck the Drop Dimensions box (if this is indeed the case).
When placing the Dimension you may have "Manual" Placement selected instead of Automatic for the Dimension Text placement. This setting will cause this

Thanks. Karl's answer was correct for editing the existing dimensions. The other two are correct for creating new ones.
