Problem

User is looking for a way to always have data_fields never plot. 

Solution

To have the Data Fields always turned off in the Print dialog edit the Print Menu Bar.
To do this select Workspace Customize.

Go to the Menu Bar tab.
Under Menus select Print and then select the Modify button.

For the Key-in: set it as:
dialog plot; PRINT ATTRIBUTES DATAFIELDS off

Select OK and Save the change.
Go back to the Print dialog (File – Print) and the Data Fields should be turned Off under Print Attributes.

To do the same for the Print Icon go to the Tool Boxes tab.
Set the Edit Tool Box: to Standard.
Use the same keyin above for Print.
Select OK and Save.
