I'm looking for a software that I can use to analise the different effects that changes in the surfboard structure can influnce in its performance. For example, calculate the force of lift for different concavities of the surfboard.
If Maxsurf can't be used for this ends, is there a good cfd software that I can use (and be intuitive, if possible)?

I wouldn't recommend MAXSURF for this analysis. For finding the difference between finer design details, CFD really is the answer.
However, even for CFD, you will still need modelling software to create your shapes. MAXSURF would be great for it, however you might find that general model softwares such as MicroStation, Rhino or Solidworks are a better economic fit if you don't already own MAXSURF.
