In this case we have: 2 "header and 1" branch, tee threaded type and hex head bushing reduction type, I thought to create the following modeling example:
O01: header 2 ", length 1000 mm, thickness 3.2mm;O02: run (for tee header) 2 ", length 64 mm (note A of the manufacturer's scheme) and thickness 7mm (note G of the manufacturer's scheme);O03: run (for tee header) 2 ", length 64 mm (note A of the manufacturer's scheme) and thickness 7mm (note G of the manufacturer's scheme);
P01: run (for tee branch) 2 ", length 64 mm (note A of the manufacturer's scheme) and thickness 7mm (note G of the manufacturer's scheme);P02: reducer 1 "(hex head bushing reduction) length 22 mmP03: branch 1 ", length 1000 mm
moreoverfor the tee type I selected: FITTING; 1,in the threaded connection points I inserted a user SIF (O01, O03 and P02) see below:

I would consider only the SIFs required for the treaded connection. There should be one or two nodes on the header with this SIF and one on the branch pipe. These nodes need to on pipe with the same properties and branch or main pipe, You can add thickener or rigid elements to model the fitting but the SIF must be on pipe.

If I understand correctly there are 2 components that you are modeling here:
1. 2" x 2" x 2" - 3000# tee, threaded
2. 2" x 1" red. threaded
if yes, suggest the following.
Appears that you modeled the piping geometry correctly per the size chart above. However, Tee Type would not be a Fitting by definition, see Flexibility and Stress Intensification Appendix in your code. Maybe a Welded tee is a better selection. Also the SIF values would be 1 Tee SIF and then add an additional 4 Threaded SIF values as indicated above.

No your modeling had Tee type set to Fitting and missing an SIF as mentioned above. Your general modeling of pipe lengths appear to be ok.
Yes, you can use a different pipe property id that considers the thicker fitting wall and apply this pipe property ID to the fitting pipe runs. Just be mindful of the details, Type of tee and be sure to account for all Threaded joint location with a User SIF.
