Dimension definitions (styles) are configured in the isometric seed file. Although several dimension styles can be defined, the “active” style is the one used when generating the isometric drawing.
A limited set of MicroStation fonts support the display of stacked fractions. An appropriate font must be set in the Text tab of the Dimension Style dialog. "1 WORKING" and "32 INTL_ENGINEERING" are examples of fonts that support stacked fractions
Gasket dimensions are controlled by a switch in each Isometric Style. The default setting is to not include gasket dimensions. Use the steps below to modify the switch.

We have Modified the wiki as per latest version. Here, in dimension styles, it is referring in context with OpenPlant Isometrics Manager Style folder, where you will get default Styles like IFC, etc.
By selecting those styles, it will take all the settings present inside that folder.

For stacked fraction, can you try to post a new query on wiki along with snapshots and what changes you would like to see.
