Does anybody know if the source code of the Level Manager (or snippets from it) is available? I like the way that the colorpicker, linestyle dropdown list, etc, are part of the listbox and I'd like to do something like that myself. If anybody has clues or examples, it would be much appreciated.

Dialog like Level Manager display a ListBox. In the V8 era, you populate a ListBox with data from a ListModel.
A ListModel is a versatile data container. You can store various types of data — numeric as well as string — and the displayed information can be formatted differently to the underlying data. You can also specify a cell editor to be used with a particular cell (or more usually a column of cells). The custom cell editor is what you're seeing in Level Manager.
This version of the Datasheet MDL example includes a custom cell editor.
