How do I book out a license to work off network?

Now licensing is integrated with CONNECT Licensing which will ask you to loging in Connection Client. After login it will allow you to work for next 7 days and withing this period yo can work offline too. But after this 7 days period completed, you need to just once connected to your internet and again you can able to run for next 7 days. This is the way how CONNECT Licensing work. But if you always want to work offline then you need to Check out your license. Hope this has answered your query. We have here one Wiki which can explain you much better way.

Is that relevant for the earlier versions not using Connect?

you have to check out via the license manager as stated or see

as a similar case Nodelock checkouts. Just checkout from SELECT.
