I set up a subsurface utility model in my design file. It is making my design file run slowly and crash alot. Is there a way to undo the model creation of the subsurface utilities in my design model?
When you first set it up, the program yields a message saying that creating the subsurface model is not undoable. There is no way to undo it.
When do you experience the crashes? while doing what specifically, maybe we can trouble shoot it.

Typically, anytime it is updating the features on the fly is when it crashes. An example would be when I am adding constraints, point controls, etc....
What product and version are you running? I would suggest using a different dgn/model for your corridors.
