I am coming to OpenRoads Designer from a Civils 3D background and have what could be a somewhat British problem. I'd like to know how I would create raised tables as in the screenshot below (modelled in C3D). In C3D I would use varying height kerb assemblies to go up from 100mm upstand to 6mm and down again with the vertical profile to create my ramps and table, is there a way I can use parametric constraints on my templates to do this in ORD?
You can take the same approach in ORD, vary your centreline vertical geometry to raise the road surface. You can then use parametric constraints to adjust your kerb height. That is assuming your template is setup to allow for a varied kerb upstand.

You could create an additional 3d elements in your vertical alignment window and then create a point control to target it.
That way your original vertical alignment will remain intact
