I believe there is a bug in the 10.7 version that does not honor level display. You could try global display instead.

I think that setting is in the feature symbology. Check the 3d settings. There is an element template that is assigned there. Either remove this template of edit the element template to remove the cell display.

Hi Chris,

The 3D model is referenced to the profile model so you may use level display manager to control the levels displayed in the profile view
