How do I go about annotating a profile model? I need to show curve radii, slopes, k values, curve length, etc.

In the 2021 releases (10.10.x) there is an option to annotate in the profile view itself (as a temporary means for design purposes), but it appears you are running an earlier version.

Annotation happens when you create the named-boundary/drawing models for sheet creation.
