On a profile, I'm trying to show the size of each crossing (e.g. 4" water pipe or 6" sanitary line) to scale. Can I control how the features are displayed on the profile? If so, how? Thanks...

Are these features in a DTM? If so, in the Style attached to feature, edit the Surface Feature Symbology, and set the Profile Point to display a cell that represents your different size pipes. Then when you show Crossing Points in Profile, the cell will be placed and scaled as necessary.

In another post, you mentioned not having a depth. You can drape features on a surface, with a vertical offset to assign an assumed elevation.
Bonus Tip: If you add special text to the description or parent fields of the features, you can use them as part of an automatic label. For example - "Depth Assumed - 3' Min. Cover" as the feature Description or Parent and then when annotating features in profile or cross section, enable one of those as part of the annotation.
