Let me suggest a slight change in the suggested workflow which might be useful.

If the pond design is controlled bottom up then Create the base for the pond using the design tools.
- But, if the project contraints dictate a top down design then the top surface
Then use command Create 3D by Volume" to create the opposite surface (top or bottom).
Then use a linear template to create the earth banks of the pond.
Optional: Create a terrain surface of the pond design.

The advantage here is that since the top and bottom surface are defined by a 3D volume rule you always know what the storgae volume is and if somehting changes, you can redesign the pond by simply selecting the 3D Volume element and change the property for volume larger or smaller and the entire pond design will update.

Are you using the OpenRoads tools to create the pond?.

I don't have a video for the pond creation in OpenRoads but the workflow below should help you.

Create the base for the pond using the design tools.
Asssign a linear template to the base to create the earth banks of the pond.
Create a terrain surface of the pond design.
Use the Analyse Volumes tool to report volume to a Plane, which can be set as the Water level.
