    I don't think that there is a way to model a cover plates for webs of the beams in STAAD.Pro. You would need to create a custom section with a thicker web.

    In the Analytical Modeler you can change the division of each edge of the plate when creating a plate mesh. In the Physical Modeler the mesh size can be controlled by going to File -> Options -> Analysis Model.

    Choose Return To Analytical Modeling from within the Physical Modeler ( available within the Model ribbon menu ) which would generate the analysis model. You would then be able to Run Analysis as usual from within the analytical modeler.
